Customarily, a manual operation was practiced to extract the kernel from the shell of the cashew nut. However the more successful mechanical methods depend on the nuts having passed through the 'hotoil' CNSL extraction operation.

The cashews are sent for a steaming method and the kernel is removed from the shell. Then they run through a drying process, the testa is peeled off and the kernels are graded and packed.

The cashews are gathered to undergo a steaming process in a Cooking Machine (Boiler). This process is carried out without the steam pressurizing the cooker vessel for about 30 minutes. However based upon the conditions of cashew nut and atmospheric situations, the cooking/steaming period varies. The shells get enlarged and the nuts are softened due to penetration of steam into the shell.

Once the steaming done, the nuts are air- cured after which the shell gets hard and is ready for the shelling process operated in the Cashew Shelling Machine. The steam processing preserves the original color of the cashew kernel inside the Nut. The cut shells of steam roasting process yield quality Cashew Nut Shell Liquid [C.N.S.L.].

The system with a Cashew Shelling Machine is simple and enables a continuous flow. A revolving paddle sets the shells against the solid casing and pierces them on the convex side by means of two blades. The two blades are used to split the nut by operating the handle of the cutter. Thus the operation forces the shell to crack open without breaking the kernel. After de-shelling the nut falls freely due to gravity and is collected beneath the cutter.

The percentage of whole kernels produced is around 75%. By preparing the shells with grooves and weakening the strength of them before the operation begins, the percentage can be increased. A different rotary speed is used for various nuts based on size groups. The speed of the rotor can thus be turned down and the risk of damaging the kernels is reduced.

The shelled kernel is layered with the testa and is dried with a Cashew Dryer Machine operation.

To easily facilitate removal, i.e. to peel in order to produce the lightened kernel, the shelled kernel undergoes a drying process.

By this, the kernel is safeguarded from pest and fungus attack at this weak stage. The moisture content is approximately 6% before drying and 3% after. During monsoons, it is important that the capacity of drying should be higher than the shelling because the drying operation will be extended as the kernels will soak up the moisture very fast.

It takes around six hours for drying, at a temperature of around 70°C. A uniform temperature throughout the drier is essential to avoid under drying or scorching.

In the dried condition, the kernels must be handled with care as they are most vulnerable, being both fragile and inclined to insect infestation.

The packing needs to be resistant as cashew kernels are subject to rancidity and go stale very quickly. The grated and moisture conditioned cashew kernels undergo the normal packaging method for export, i.e. they are filled in 18Lt/ square tins, 25Ibs (11.34kg) to a tin.

The Tin Packing (Vita) Machine operates by feeding the Cashew kernels into the vibratory filling machine through a pneumatic Foreign Matter Segregator (PFMS). 8 Tins (Leak tested and Tar weighed) are filled at a time; Filled tins are then weighed for a net weighed of 11.34 kg plus or minus 10gm using electronic weighing scale. After filling and weighing, the cap should be soldered on in preparation for the 'vita pack' process. This consists of injecting inert gas viz. Carbon-di-oxide or Nitrogen into the filled tins.

The advantages of packing cashew kernels in carbon dioxide are carbon dioxide is an inert gas and will not support life. Secondly, carbon dioxide is soluble in cashew oil and goes into solution as soon as the seals are made.

Two tins are packed in a unit carton and strapped and stencil marked for delivery. The consignment is shipped after per-shipment inspection formalities.

A Pouch Filling & Sealing Machine operates by a method of creating a pouch from a roll of printed film, filling and then sealing.

Thus the Cashew Kernels can be packed in pouches that are multilayer flexible and convenient. They are gas flushed and sealed - 25 pounds net per pouch. All importers in USA and Europe prefer this system of packing.
